Kellie, this eggplant dish looks seriously good. And those fried caper chickpeas! I’m always a sucker for a Middle Eastern inspired eggplant dishes. And as we’ve discussed before, funny how we never think to blog some of our most loved go-to dishes. 😉 So glad you shared this though!

Love, love, love this recipe! It reminds me of a wrap I ate years ago when pregnant with my daughter. I’ve been thinking of that sandwich ever since, the perfect combo of roasted eggplant, hummus and avocado, I will definitely be making this one.
I also love all things citrus. Please, please tell me where I can find powdered yuzu online, I never knew it was available in powdered form and all the bottled yuzu I can find locally has some extra funky ingredients that I have no interest in consuming.

Ooh, this would be good on a sandwich! Great call! As for the yuzu, I don’t know where you are but in the UK you can get powdered yuzu from souschef.co.uk. They have loads of unusual things for those who like to experiment with food.
