food to glow

feel good food that's good for you

DSC_0008A little late to the National Vegetarian Week party, but better late than never!

Here at food to glow we are omnivores, but because of my work as a cancer health educator I know the health value of eating a plant-centred diet. And I try and practise what I preach. Most of my recipes are vegetarian and vegan because that is how my family and I eat eat ninety per cent of the time.

There are a slew of statistics to endorse reaching for a vegetable kebab over wolfing down a well-done burger (sorry fans of In-N-Out Burger) – lower risk of early death, lower weight, lower risk of numerous cancers, stroke, heart disease, osteoarthritis, gout – I could go on, but you get the picture.

Instead of dwelling on the health aspects, or touching on the ethical issues, I will keep it light and luscious with some of my top vegetarian and vegan posts. Interestingly, some of my top posts are because of being ‘discovered’ by some serious power pinners on Pinterest, despite being a lazy bones when it comes to social media. Thank you, whoever you are!

So, here is a week of meat-free eating to whet your appetite and keep you healthy. Just add plants!

Quinoa Bowl with Citrus, Avocado and EdamameMy top salad (at least according to Pinterest) – Quinoa Bowl with Citrus, Avocado and Edamame

'creamy' zucchini, walnut and thyme soup“Cream” of the Crop Soup (again, according to Pinterest) – “Creamy” Zucchini, Walnut and Thyme Soup

lemon-berry polenta cakeFeel like baking? Lemon-Berry Polenta Cake is a favourite at my cancer nutrition classes

Tamarind and Shiitake Tofu with Sesame SeaweedOr something different? Tamarind and Shiitake Tofu with Sesame “Seaweed” (this is the post that got me Freshly Pressed in my first year of blogging – we make it quite a lot)

These two cracker recipes are great little dippers (and pinned quite a lot, despite the dodgy photos)

And a couple of dips to go with them – Super-smooth Hummus and Beetroot and Cashew Hummus

vietnamese crepesOver-stuffed Vietnamese Savoury Crepes for an unusual but simple supper

chickkpea and vegetable taFibre and flavour in Tunisian Chickpea and Vegetable Tagine

And finally two drinks to wash it down – or rather one to sup and one to cure what ails you! Frozen Banana and Almond Wake-Up Shake and Spiced Golden Turmeric Milk

There are lots of bloggers bigging up the virtues of vegetables this week. Two of my favourites are Ren Behan and Jacqueline Meldrum (Tinned Tomatoes). Please go and see what they have to share this veg-tastic week.

If any of you are doing something special for National Vegetarian Week – a competition, recipe roundup, link party – let me know and I will add your link here too!

Thanks for indulging me with a round-up of my own recipes. I’ll be back in a day or two with an original vegetarian recipe to round off the week. I’m thinking Greek!

Great roundup Kellie. Had no idea you were an omnivore! I love all your recipes. Colourful and inspiring.

    1. Thanks Urvashi. In all honesty, after listening to my body I started including a bit of fish and poultry. But I prefer eating vegan. I just have a hard time with most legumes and some nuts/seeds. Which is a bit of a bummer really :-/

  2. What a luscious round-up, and I’d recognize that Quinoa Citrus Bowl anywhere (LOL-I pinned that recipe and it’s been repinned 420 times so I think you need to hire me as your social media manager 🙂 Seriously though, great post & I think we eat very much alike, although I do enjoy an In-and-Out Burger (Protein Style, thank you) a few times a year, usually on a road trip w/ my family 🙂

    1. Thanks so much, Miss Power Pinner! I’m rubbish with Pinterest so I am very grateful for your pr 😉 As for the In-N-Out Burger, I secretly wouldn’t mind having a wee nibble just to see what the fuss is about. But burgers are suddenly a big deal here and meat lust is getting out of hand. Nice to have Veggie Week pop up to garner some attention.

Wonderful roundup! My fave’s gotta be the Vietnamese pancakes but goodness I could eat through all ov those with utter pleasure this week! X

  3. mmmarzipan says:

How awesome! Thanks for sharing x

  4. Though I love meat, these recipes show how fabulous non-meat dishes can be. I love the creativity and the color.

  5. So many delicious recipes here! They’re pretty much all going on my ‘to-cook’ list.

I’ve been celebrating veggie week too by inviting lots of other vegetarian and vegan bloggers to share their stories and recipes through guest posts on my blog. There’s even going to be a post from a non-veg blogger later in the week who is taking on the challenge of cooking a vegan dinner for the first time 🙂

    1. You are way more organised than me! Sounds like you are celebrating in great style -and generosity

  6. Your “creamy” Zucchini, Walnut and Thyme Soup looks delicious! I have been a vegetarian for 3 years now and really wish that my family would eat vegetarian friendly meals regularly!
Also, I visited Edinburgh a year ago and got to spend about a week there. I got to stay at a quaint bed and breakfast and enjoyed taking in the beauty of Scotland! I really hope to go back someday (a little jealous that you get to live there)!!
    Blessings,
    Morgan 🙂

    1. I really love Edinburgh. It’s quite cosmopolitan for such a small place – and so beautiful too. I’m glad you enjoyed yourself here. I hope you ate well 😉 And thanks for the comment on the soup!

  7. Liz Posmyk of Bizzy Lizzy's Good Things says:

Such a delicious round up, Kellie! Very inspiring!

  8. bakesinslippers says:

    looks amazing!

  9. Shannon says:

😀 This makes me want to do a happy dance. Perhaps because you have all my favs here in one spot, or maybe it’s that you ended with the word “Greek.” OPA!!

PS – I will refrain from plate smashing.

    1. Shannon says:

I read in a comment above that you have issue with legumes. Curious – does that include lentils? I could live without nuts and seeds, but lentils…

      1. Yup. I eat them but despite all the tricks one can do to help digest them, they cause quite a bit of pain, so I don’t have as much as I would like. Chickpeas are the worst so I rarely have them. Kombu helps but not as much as I’d like. Some people would change something external about themselves (nose, size of thighs). Me? My ability to digest legumes!

    2. Are you Greek? Feel free to smash a plate or two regardless. Good stress buster, I’d imagine 😉

  10. cheri says:

Hi kellie, what a great line-up of recipes. Love your zucchini soup.

  11. Deena Kakaya says:

Wonderful roundup! My fave’s gotta be the Vietnamese pancakes but goodness I could eat through all ov those with utter pleasure this week! X

  12. It’s easy to see why they are so popular on Pinterest Kellie, you make such luscious food and your photography is just beautiful. Thank you for including me in your post x

  13. What a great spread. I personally know how good your zucchini and walnut soup and the turmeric milk are!

  14. narf77 says:

I pin every single recipe that you post about. If any of my followers drop down to take a look I am glad that they do. Your images sell your recipes beautifully. No time to chinwag, I am off to pilfer (and Pin) all of those recipes above…only one problem, the link for the crackers doesn’t work 🙁 I would LOVE that recipe please 🙂

  15. What a wonderful collection of recipes, so much vibrancy and flavour 😀😀

  16. Looks delicious! Literally every last one! Now I must choose which to make first…

  17. Shannon Lim says:

I’m drooling at the photos, you have make veggie dishes look so good! I’ve pinned most of the featured recipes, only tried the zucchini soup.. my family loves it! gotta try the vietnamese pancake soon

    1. Shannon Lim says:

oh I’m having a hard time with legumes & nuts lately too, chickpea don’t agree with me which is a bummer, love hummus. gonna try sprouting them to see if they can be digested better

      1. Hi Shannon. I’ve had limited success with peeling my cooked chickpeas (well, rubbing off the skins in a tea towel). Maybe give that a shot? I still can only have a little but it’s better than nothing 😉 This issue is the main reason I am an omni rather than a veggie!

    2. You are way too kind, Shannon. Thank you so so much. Have you eaten any of your kale from your balcony yet? I’m so impressed that you can grow it in such a hot place!

  18. Sally says:

You deserve those power pins – your food is always so appetising.

    1. Thanks, my lovely. Some dodgy old blasts from the past, but I guess we learn and grow as we continue to experiment, write and, most importantly, eat.
